Ancho Chile and Chocolate Pot de Creme From Chef Jimmy Madla of Coobah

Ingredients: 8 oz Chopped bittersweet chocolate 5 Egg yolks 6 Tablespoons Sugar Pinch Salt 2 Tablespoons Ancho Chile powder 1 ¼ cup Heavy cream 1 Tablespoon Vanilla extract 2 oz Patron café 1 cup Half and half 8 oz Dried cactus honey powder (or sugar in the raw)

Recipe: 1. Place chocolate in large stainless steel bowl and place a fine mesh strainer over the bowl. 2. Whisk yolks, sugar, ancho chili powder and salt in large bowl until combined; whisk in heavy cream and half-and-half in a medium saucepan. 3. Cook mixture over medium-low heat, stirring constantly and scraping bottom of pot with rubber spatula, until custard registers 175 to 180 degrees on instant-read thermometer and is thick and sauce-like, 10 to 15 minutes. Do not let custard boil. 4. Immediately pour custard through a fine mesh strainer over chocolate. 5. Let mixture stand to melt chocolate, about 5 minutes. 6. Whisk gently until smooth, then whisk in vanilla and Patron. Divide mixture evenly among ramekins. Gently tap ramekins to remove air bubbles. 7. Cool pots de crème to room temperature, then cover with plastic wrap and refrigerate until chilled, at least 4 hours. 8. Top with cactus powder honey or sugar in the raw and brulee with a torch.
