Irish Boxty
3 lbs of mashed potato
3 lbs of grated white potato
5 eggs
1/3 gallon of milk
4 cups flour
salt & pepper
pinch of nutmeg Filling
3 lbs of corned beef
4 lbs of cabbage
Directions:
Mix ingredients for the Irish boxty. The consistency should be like a pancake. Put butter into a pre-heated frying pan or hot griddle and cook until golden brown. Flip with spatula until other side is golden brown. Remove and let cool. Once cooled, you can fill with corn beef and cabbage or serve plain.
