Hand-Cut Fries
Yield: 1 plate
Ingredients:
3-4 Potatoes for one plate
Directions: Cut potatoes on 3/8" french fry cutter and place in cold water over night. Blanch baskets of fries in 360 degree oil for 3 minutes exactly. Place on sheet pans, one layer and cool. Blanch again in 360 degree oil for 2 minutes exactly. Place on sheet pans, one layer and cool. Ready for service and place fries in 360 degree oil for 1 minute to pick up. Season with burger seasoning.
White Truffle-Parmesan Fries
Yield: 1 Plate of Truffle Fries
Ingredients:
1/2 oz white truffle oil
3 Tbs Parmesan Cheese, grated
1 tsp parsley, chopped
Directions:
Follow the Hand-Cut Fries directions above. In a bowl, toss fresh hand-cut fries with white truffle oil and parmesan cheese. Garnish with chopped parsley and parmesan cheese.
Burger Seasoning Mix
Ingredients:
Kosher Salt
black pepper, fresh ground
garlic powder, granulated
white pepper, fresh ground
Directions: Mix all ingredients together well

1/2 oz white truffle oil

Burger Seasoning Mix
Ingredients:
Kosher Salt
black pepper, fresh ground
garlic powder, granulated
white pepper, fresh ground
Directions: Mix all ingredients together well
Burger Recipe:
- Start by brushing a sesame seed bun with clarified butter
- Set buns aside
- Start with 100% prime ground chuck and form into a 9 oz burger
- 4:1 - Kosher Salt and Fresh Ground Black Pepper, mix together for burger seasoning
- Season both sides of the burger liberally
- Put a TBL of clarified butter in the pan, sear one side 2-3 minutes
- Turn over and sear other side for 2-3 min for a Medium Rare Burger
- Pile on your favorite toppings!
