At Home Sushi Rice Recipe:
2 cups short or medium grain sushi rice (cannot use long grain, as it will be too dry)
Cook according to instructions on bag.
Place cooked rice into a non-metallic bowl.
Gently fold in about 1/2 cup of seasoned sushi rice vinegar.
Mix occasionally until room temperature.
Store covered with a damp cloth and use immediately.
Tips
Wash the uncooked rice under cold running water until the water becomes almost clear.
Once you have measured out the correct amount of water and poured it over the uncooked rice, let it soak for 30 minutes.
After the rice has finished cooking, let it rest 10 minutes with the lid still on.
Be patient. Cooking perfect sushi rice takes time and practice. All rice cookers and pots cook rice differently. Experiment and see what works best for you.
Veggie Delight Handroll
Ingredients:
carrot sticks
cucumber sticks
avocado slices
Inari marinated tofu or slices of grilled firm tofu
1 cup prepared sushi rice
sheets of nori sushi seaweed paper cut in half
Directions:
Place the rectangular half nori sheet on a cutting board with the long edge facing you. Wet your fingers with cold water and take about a golf ball sized portion of sushi rice. Cover the left half of the nori sheet with the sushi rice, leaving an empty triangular space at the upper left hand corner. Place vegetables and tofu onto middle of the sushi rice diagonally pointing toward the empty triangular space. Take the bottom left hand corner of the nori sheet and bring it up so that it meets the middle of the top part of the nori sheet where the sushi rice stops. Put slight pressure downward and then roll the sheet to the right along its side until you have a cone shaped hand roll. Dip into soy sauce or other dipping sauce and enjoy.
To make a Luau Roll use: Spiced pineapple, toasted almonds, avocado, lump blue crab meat, topped with fresh Scottish salmon and seared with spicy mayo and scallions.
