Healthy Grilling Tips
1. Maximize flavor the Healthy Way - Use marinades and rubs to increase flavor and reduce need for high-fat condiments (Diane will prep these recipes on-air while grilling)
2. Trim that Fat! - Choose low fat meat & poultry and trim all visible fat
3. Foil the Fish - Use a grilling basket for shellfish or fish, but if you don't have one, then just wrap foil around shellfish and fish
4. Be Adventurous - A great way to get in healthy flare is to grill fruits and veggies for a change of flavor.
5. Charring No-No - Most may not be aware of this, but high temperatures can trigger compounds in muscles of meats, poultry and fish called HCA's which may increase cancer risk so turn often and avoid charring.

1. Protein - chicken breast, lean pork chop, shrimp, salmon, as well as items to prepare a marinade.
2. Starches - finger potatoes, jicama
3. Fruit - pineapple ring, peaches, variety of fruits
4. Veggies - corn, eggplant, zucchini
5. Other materials to cook with: Canola oil (to reduce sticking on grill grates), grilling basket, disposable grill grates for fish and shellfish, basting brush to baste sauces and marinades, True Lemon for seasoning

Ingredients:
Combine all ingredients together in bowl. Whisk well.

Directions:
Preheat grill for medium heat. In medium bowl whisk together first 7 ingredients (garlic powder through TrueOrange™) adding a little water as needed. Add the shrimp and gently toss until evenly coated. Use either a perforated mesh grill top pan or skewer shrimp and place on grill. Cook for 2-3 minutes per side or until just turn bright pink on outside and opaque in center. Lightly sprinkle with combination of TrueLemon™, TrueLime™ & TrueOrange™

- 1/4 cup rice vinegar
- 1/4 cup water
- 1 packet True Lime
- 1 packet True Lemon
- 2 Tbs sesame oil

- 1/4 tsp freshly ground black pepper

- 2 lbs. shrimp; peeled, deveined, tail on (21-25 per pound)
- Combination of 1 packet each of TrueLemon™, TrueLime™ & TrueOrange™<
